Existence in History
Rice in the days of Chera/Chola Kingdoms was considered a royal food. One adventurous farmer chanced upon this unique rice variety on the king’s farm and carried it away from Palakkad to Wayanad and started growing it in the hills. The rice variety fell into the public domain and was sown by the farmer and soon became a regular rice crop in Wayanad. This rice was popularly referred to as “Palthondi” and exclusively cultivated in Wayanad and later came to be known as the Wayanadan Palthondi Rice.
Appearance and Texture
Palthondi rice has a reddish-brown or amber colour and is typically medium-grained with a slightly coarse texture compared to polished rice, providing a delightful chewiness when cooked. The grains are usually longer than other varieties of rice, and they have a unique aroma and flavour that is slightly nutty and earthy. The colour of the rice comes from a natural pigment called anthocyanin, which is present in the outer layer of the grain. Palthondi generally tends to be softer after cooking compared to Palakkadan Matta Rice.
Nutritional Composition
Palthondi Rice is known for its excellent nutritional profile. It is rich in dietary fibre, which aids digestion, promotes bowel regularity, and helps maintain a healthy weight. It also contains essential minerals such as magnesium, phosphorus, and potassium. Palthondi Rice is a good source of B vitamins, including thiamine (B1) and niacin (B3), which are important for energy metabolism.
Health Benefits and Wellness
The unique qualities of Palthondi Rice contribute to its numerous health benefits. It is a good source of dietary fibre, protein, and essential minerals. The rice has a low glycaemic index, which means it causes a slower and steadier rise in blood sugar levels, making it suitable for individuals with diabetes or those aiming to manage their blood sugar levels. The high fibre content aids in maintaining healthy cholesterol levels, reducing the risk of cardiovascular diseases, supporting weight management, and also promotes digestion and preventing constipation. The antioxidants present in rice can also help reduce inflammation and prevent chronic diseases.
Cultivation and Production
Palthondi Rice is traditionally grown using organic and eco-friendly farming practices. It is cultivated in the flooded farms of Wayanad, where the soil retains moisture and fertility. The rice is typically grown in the monsoon season, which lasts from June to October, and is harvested in December. The rice is typically rain-fed and does not require excessive irrigation or the use of chemical fertilizers and pesticides.
Culinary Applications
Palthondi Rice is widely used in Kerala's traditional cuisine and is the preferred choice for dishes like Kanji (rice porridge), Puttu (steamed rice cakes), and Pazhankanji (fermented rice gruel). It is also suitable for pilafs, biryanis, and rice-based desserts. Due to its growing popularity, Palthondi Rice is now being incorporated into modern and fusion recipes, adding a unique touch to culinary creations.
