Healthy Quinoa Balls
The sweet aroma of roasting quinoa wafts through the air, drawing villagers to the heart of the village where laughter and stories blend with the rhythmic sounds of preparation.
Here is the recipe
Ingredients
½ Cup Almonds
½ Cup Dates
1 Cup cooked quinoa
⅓ cup Dark Chocolate
1tbsp Crunchy Peanut Butter
Ghee
Methods
Rinse Quinoa: Place the quinoa in a fine-mesh sieve or strainer and rinse it thoroughly under cold running water. Rinsing helps remove the natural bitter coating on quinoa called saponin.
Combine Quinoa and Water: In a saucepan, combine the rinsed quinoa and 1 3/4 cups of water or vegetable broth. You can add a pinch of salt if desired, but it's optional.
Boil: Place the saucepan over high heat and bring the mixture to a boil.
Simmer: Once it comes to a boil, reduce the heat to low, cover the saucepan with a lid, and let the quinoa simmer. Simmering time for lightly cooked quinoa is shorter, usually around 10-12 minutes.
Check Consistency: After about 10 minutes, check the quinoa for doneness. You'll know it's ready when most of the liquid is absorbed, and the quinoa grains have softened slightly but still have a slight crunch when you bite into them. If it's not at your desired level of doneness, continue cooking for another 1-2 minutes, checking frequently.
